Classic Chocolate Cake

FoodVeronica ArrietaComment
The best classic chocolate cake (with recipe!) - A serious crowd pleaser!

I love cake! My husband's birthday was in December so I threw him a (successful) surprise birthday party!! He's a chocolate lover so I surprised him by baking the most epic chocolate cake (from Sally's Baking Addiction). Everyone loved the cake and was raving about it until the following day, which is always a good feeling! It's a classic triple chocolate cake with a milk chocolate frosting. I think the milk chocolate outside balances our the dark chocolate cake. This is a chocolate lover's dream - it's dark, chocolaty and moist, but I think the key is the brewed coffee because it gives it depth. You'd be crazy not to make this for a birthday, a special someone, entertaining guests or just because...because we can all use some cake every now and then!

I had mini chocolate chips on hand so decorated the sides with chocolate chips!

I'd love to know if you end up making this classic chocolate cake. Leave me a note in the comments below!

Avocado Toast, 6 Ways

FoodVeronica ArrietaComment
Avocado toast: 6 Easy Ways to Amp Up Your Avocado Toast

Avocado toast has been super trendy. It's been on breakfast menus and served at coffee shops but there's a hefty price to it. Fortunately, it's so easy to make at home. Avocado toast isn't anything "fancy" or revolutionary, in fact it's just sliced or mashed avocado on top of a piece of toast - so simple, yet so delicious. You can eat avocado toast for breakfast, lunch, dinner and even a healthy daytime snack. I've come up with a few different variations to keep our avocado toast interesting.

Tomato Basil Avocado Toast

Ingredients:
-Bread of choice (I chose whole-wheat)
-Half an avocado, mashed
-Salt + pepper, to taste
-Cherry tomatoes, quartered
-Fresh basil, chopped
-Olive oil
-Balsamic vinegar

Instructions: Slice cherry tomatoes and basil. Mix tomatoes, basil, olive oil, and balsamic vinegar in a bowl. Toast bread. Top toasted bread with mashed avocado, salt, and pepper. Add balsamic tomato mixture on top, then drizzle with a little extra balsamic vinegar. This is my favorite!

Strawberry + Avocado Toast

Ingredients:
-Bread of choice (I chose whole-wheat)
-Half an avocado, mashed
-Strawberries, sliced
-Pepper, to taste
-Fresh Feta Cheese, crumbled

Instructions: Spread toasted bread with mashed avocado. Then sliced strawberry and crumbled feta. Top with some pepper to taste. This is another favorite...Sometimes I'll top with some basil and balsamic.

Almond Butter + Sea Salt Avocado Toast:

Ingredients:
-Bread of choice (I chose whole-wheat)
-Almond Butter
-Half an avocado, sliced
-Olive oil
-Sea salt, coarse

Instructions: Toast a piece of bread. Spread your favorite almond butter while the bread is still nice and hot. Layer with avocado slices and top it off with some sea salt.

Lox Avocado Toast

Ingredients:
-Bread of choice (I chose whole-wheat)
-Half an avocado, mashed
-Lox salmon
-Salt + pepper, to taste
-Red onion, chopped
-Capers

Instructions: Toast bread and spread mashed avocado on top. Sprinkle with some salt and pepper. Top mashed avocado toast with lox, red onion, and capers.

Honey Drizzle + Avocado Toast

Ingredients:
-Bread of choice (I chose whole-wheat)
-Half an avocado, mashed
-Salt + pepper, to taste
-Honey

Instructions: Mash avocado and place on top of toasted bread. Sprinkle salt and pepper on top then drizzle honey.

Bacon + Avocado Toast

Ingredients:
-Bread of choice (I chose whole-wheat)
-Half an avocado, sliced
-Salt + pepper, to taste
-Bacon, sliced

Instructions: Place avocado slices on top of toasted bread. Sprinkle bacon pieces on top. Then top it off with some salt and pepper.

Do you have any 'fancy' avocado toast recipes to share? I'd love to try them!

Today I’m celebrating a very special anniversary. One year ago I launched Four Threads.

It's been so humbling to see something that I've put my blood, sweat and tears into blossom into something amazing. Anything I'm able to do, is delivered by God, not by my own strength. There are truly no words to thank you for all your love and support. To all of you who spend time reading my posts, leaving a comment, emailing me, subscribing, and following on social media - thank you!

I started Four Threads as an outlet that weaves together the threads of my life through fashion, lifestyle, beauty and faith. A place where you feel warm and welcomed every day. I can't wait to see what in store for this next year!

A Little R&R

Faith, LifestyleVeronica ArrietaComment

My husband and I headed to Carmel this past weekend for some much needed R&R. It was a super last minute trip - in fact we planned, packed, and got on the road all within an hour and a half. Pretty impressive, huh!

Sometimes the city and work life gets the best of you and you just need to break away from everything...which is exactly what happened to us. We needed to get away and press the reset button. We turned off the music, put our phones away, opened the bible and just talked the whole time. I really can't stress how important it is to break away from everything and rest.

Have you been completely overwhelmed at work or in life? What's the last time you broke away? Find a nearby city (a couple hours away) where you can get away for the weekend!
